Foraging with Charlie Stocker

The Edible Essex project staged another successful foraging session on 19th October, this  time lead by Charlie Stoclker, Essex Chef of the Year finalist for the second year running, and Masterchef: The Professionals quarterfinalist.

The session, which was designed to introduce novices to the fabulous fungi and wild foods found at Belfairs Park near Southend, started at the Essex Wildlife Trust’s Woodland Centre in the park. A number of different mushroom varieties were identified and picked.  Attendees learnt how to identify the edible varieties and Charlie offered suggestions of recipes and how he would use the wild food found.
